Random Crap – The Kitchen Edition

1. Eggs in a ham cup

Preheat oven to 350
Sautee some onions and minced garlic in a skillet
Place a slice of nitrite free ham in each muffin cup
Spoon a bit of onion and garlic into each cup
Crack an egg on top of each onion/garlic pile into the ham (NOTE: I’m not very skilled so I cracked them into a small bowl and poured them in)
Bake 12-15 min

These are ABSOLUTELY delicious, store well in the fridge, stupid easy to make, and very quick. A+ all around.

Variations:
Kristen and I have been discussing vegetarian options. So far we’ve come up with bell pepper and tomato cups. ANDDDD for the really hungry…. a few eggs in half a squash bowl (LOL)

2. Chocolate Covered Bacon

Bacon turds.

I finally made some!

Preheat oven to 400
Bake bacon for ~15 min
Melt chocolate on a plate* in 30s intervals in the microwave (dont try to melt it all at once or you’ll just burn it and be pissed off)
Pat grease off bacon with some paper towels
Coat said bacon with chocolate, place on some wax paper, and place in the fridge until hardened

Variations:
I also sprinkled some salt on top of mine for the sweet/salty mixture. You could also add crumbled candy bits but I’m a quality stickler.

*I like uber dark chocolate and use Endangered Species Brand 88% cocoa

3. Collared Greens

“Shallow blanched them”
Sauteed onions until soft
Added blanched collards and thinly sliced garlic

Done.

4. Gadgets

I hosted a Pampered Chef party a few weeks ago and got a ton of new kitchen gadgets that I’ve been playing with. (um, seriously? How did I not own a garlic press until now?!) Click images for product descriptions.

That tube takes the peel off the garlic. It is magical.

This thing has made my life oodles easier. It's so freaking cool. Everyone needs a mandolin - for realz.

These little cups are surprisingly useful. I've used them about 100x each since I got them.

I got some other items too (including the muffin tin above), but these are my favs so far :)

    I have always thought about buying one of those garlic peeler things/tubes, but then I remembered how much I really LOVE smashing the crap out of garlic with a knife/fist. I would miss that too much.

      Surprisingly, smashing the cloves w/ the tube is almost as fun (if not funner – yes, real word) than smashing IMO. I’d lend you my tube for a test run, but you’re a few hundred miles away.

    whoaaa those eggs i a cup is an awesome idea!! i don’t eat ham but I would totally do that with turkey!

    i love baking my eggs in edible bowls! i use portobelllo mushrooms and bell peppers, or sauteed spinach “nests” :)
