Whole30 – Day 18
First off, what the hell. Spam bots infiltrated Hey Joob and posted their stupid posts on it. I deleted the “users” and the posts. Now, however, I am on a mission to make this blog impenetrable. I shall defeat you, spam bot foe.
Breakfast: Simple egg scramble. I don’t remember what vegetables I put in there… sorry.
Before leaving for work, I realized i had no cooked veggies for lunch. This is no good. No good at all. Solution? Cook.
Voila! My lunch was all better.
Lunch: Roasted cauliflower and baby brocoli, leftover fajita chicken with garlic & cilantro salsa on top, half an asian pear, and some almonds.
I didn’t feel like making a post workout meal AND a dinner. Hence, I did not do it. Instead, I broke out the wok! You know what that means? More vegetables.
I ended up making a curry concoction. It was really good. So good, in fact, that I made it again for breakfast and am eating it while I type up yesterday.
Well, there’s no sweet potato and fruit in today’s. Maybe I won’t post today’s eats since I’m telling you in yesterday’s post. That would be nice. I’m very much getting sick of daily posting…. I think that is the one thing I am most looking forward to ending with my Whole30.
Goopy Green, PWO Curry:
curry powder
cumin
cayenne pepper
green curry paste
baby bok choy
asparagus
yellow summer squash
ginger root
mushrooms
red cabbage
brocoli slaw
1 cooked sweet potato
cooked chicken
1/2 c coconut milk
coconut oil
Directions:
- Take all your vegetables in whatever portions suit your needs, and cook them in coconut oil until done.
- Add your sweet potato, chicken, coconut milk, and spices
- Mix it up until it’s hot enough for your tastes
I feel silly giving a curry recipe. These things are really just “throw whatever is my fridge into my wok” recipes.
In other news:
Can you believe today is already day 19? I know it sounds stupid to be impressed with myself for lasting 19 days when I dieted for a bodybuilding competition for 6 MONTHS, but the goal of this wasn’t to diet down. Which is pretty cool in my book.
Second, April marks the two year anniversary of Hey Joob. In honor of the occasion, I am going to have a round of giveaways. I don’t think I’ve ever done a giveaway on here but I thought it would be a nice way to say ‘thank you’ to my readers. Two will be by yours truly (which means they’ll probably be kind of lame because I’m not creative) and one will be pretty cool because it’s sponsored by an actual company.
I just need to get their sample in the mail so I can review it first. Technicality.
