Day 7 (Whole30 2013)

Breakfast -
2c coffee (whoops), 2 eggs, about 1.5 small spoonfulls coconut butter

Lunch -
chicken prepared in my handy, dandy new pressure cooker, leftover cauliflower, a big gloop of dill mayo, and a small grapefruit

When I got home, I made some veggies for later this week but didn’t eat any until…..

…at about 4PM a miraculous surprise arrived at my doorstep. That’s right. Black truffle salt, b*tches. OMNOM. I had to eat it RIGHT THEN AND THERE (even though I wasn’t hungry at all) and it was every bit as glorious as I remembered.  I ended up sprinkling it on a hard boiled egg, some veggies from above, and wrapping them in a coconut wrap.

Dinner, which I am still eating, was about half a pound (maybe more) of beef liver fried in coconut oil with onions and, you guessed it, black truffle salt.  On the side I had soup from yesterday, which tastes like I’m eating a tomato, and some cabbage which I baked with shredded sweet potato, mushrooms, green onion, and some spices.

    So I just can’t bring myself to eat liver, and it is the only form of offal with which I have *any* prior experience. My mother LOVES liver and bacon… I was forced to eat it as a kid, and I think I have too many negative associations with it to do it now. Is it really that good?

      *shrug* I don’t think you’re missing much by not eating liver. I like it and it’s cheap. What I LOVVEEE is the salt I used.

    How does beef liver taste? I’ve had chicken liver a few times and it was alright… not great though. I could probably choke it down again if it was served to me. Haha, I’ve had lamb liver too which was REALLY strong and not very good in my opinion.

      *shrug* I think all liver kind of tastes the same. If you don’t like liver, you won’t like beef any better. I wouldn’t say it’s my favorite meal, but it’s a nice switch from your standard protein sources.
